Thinking Green

Tocamade
I wear a very basic color palette - some would say bland: black, brown, and grays. I simply feel it is easier to mix my clothing this way. It is my way of "simplifying my life". This way most of my wardrobe matches.  I do however,  love accessories! I love jewelry, shoes, handbags and scarves to give my wardrobe a pop of color. I found this shop on Etsy called Tocamade that features upcycled scarves made of high quality fabrics like silk. I think I may be doing some shopping!

Friday Food Feature

Delicious Strawberry Soup

1 qt fresh strawberries
1 c sugar
6 T balsamic vinegar
1/2 t finely grated orange zest
1/2 t finely grated lemon zest
1 T orange juice
6 c unflavored Greek yogurt
  • In a bowl, toss 20 halved strawberries with 1/2 cup sugar and 2 Tbsp of balsamic vinegar. Let the berries soften for a couple of hours at room temperature.
  • Puree strawberries with the sugar, vinegar, zests, and orange juice. Whip the yogurt in a bowl, then stir into the strawberry puree until smooth. Place in refrigerator and chill well.
  • When ready to serve, ladle the soup into flat bowls and drizzle with a bit of the pureed strawberries, if desired.

Did you know that some pharmacies will recycle your empty prescription bottles? These pharmacies usually use removable prescription labels to protect consumer privacy and keep the plastic free of glue and paper residue. Check with your pharmacy to see if this is a service they provide and keep a bit more plastic out of the landfills.

Friday Food Feature - Cool Tool

Spring is a great time for organizing every room in your home. I love opening the windows and cleaning the house from top to bottom (granted it takes me until June to completely accomplish this task). I actually enjoy cleaning my kitchen cabinets and found this great spice rack that would take up very little space yet provide you with all the spices you need at your fingertips. Friday Food Feature

For many years I was not very good about "remembering" to eat breakfast. Don't get me wrong I ALWAYS drink one or two cups of coffee first thing but that is not breakfast, or at least shouldn't be.  I think it's a kick-back to the days of High School and College and all the Yo-Yo dieting. I am paying for it now. Health studies have shown the worst thing one can do is skip a meal or breakfast as your body, to put it simply, goes into starvation mode and stores fat. So really skipping meals can make you heavier (menopause doesn't help either)!  In the last few years I have become much more disciplined in my eating and do consistently eat breakfast. I love the color and thickness of this felt by FilzFelt.  FilzFelt is a combination of the German word for felt (filz) and the English (felt). The company, run by two women, Kelly and Traci, imports wool felt from Germany, sells it by the yard and as finished products. Their wool felt is a biodegradable and renewable material. It is also water-resistant and interestingly, is known for its thermal and acoustic insulation properties (they offer 5 thicknesses). Whoopie Pies

Cake:
  • 2 cups all-purpose flour
  • 1/2 cup Dutch-process cocoa powder
  • 1 1/4 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup well-shaken buttermilk
  • 1 teaspoon vanilla
  • 1 stick (1/2 cup) unsalted butter, softened
  • 1 cup packed brown sugar
  • 1 large egg

Filling:
  • 1 stick (1/2 cup) unsalted butter, softened
  • 1 1/4 cups confectioners sugar
  • 2 cups marshmallow cream such as Marshmallow Fluff
  • 1 teaspoon vanilla
  • Preheat oven to 350°F.
    Whisk together flour, cocoa, baking soda, and salt in a bowl until combined. Stir together buttermilk and vanilla in a small bowl.
    Beat together butter and brown sugar in a large bowl with an electric mixer at medium-high speed until pale and fluffy, about 3 minutes in a standing mixer or 5 minutes with a handheld, then add egg, beating until combined well. Reduce speed to low and alternately mix in flour mixture and buttermilk in batches, beginning and ending with flour, scraping down side of bowl occasionally, and mixing until smooth.
    Spoon 1/4-cup mounds of batter about 2 inches apart onto 2 buttered large baking sheets. Bake in upper and lower thirds of oven, switching position of sheets halfway through baking, until tops are puffed and cakes spring back when touched, 11 to 13 minutes. Transfer with a metal spatula to a rack to cool completely.
    Make filling:
    Beat together butter, confectioners sugar, marshmallow, and vanilla in a bowl with electric mixer at medium speed until smooth, about 3 minutes.
    Assemble pies:
    Spread a rounded tablespoon filling on flat sides of half of cakes and top with remaining cakes.
