Friday Food Feature ~

Like most people this time of year, the zucchini is starting to grow in our garden. This is a wonderful side dish - easy and delicious!

Sautéed zucchini with Provencal herbs

2 tablespoon butter
2 medium zucchini, 1/4-inch slices
1 teaspoon dried herbes de Provence
salt and ground black pepper
Melt the butter and oil in a large skillet set over medium-high heat. Sauté the sliced zucchini with the herbes de Provence in the hot butter for about 5 minutes, until it is tender with caramelized, golden brown spots. Toss with salt and pepper.
