8 ripe fresh tomatoes
2 cloves of garlic
Grated Parmesan Cheese
bit of olive oil
- Peel and remove seeds from tomatoes.
- Chop the onion and celery and saute in olive oil.
- When celery and onion are soft and golden, add finely chopped garlic, tomatoes, thyme and bayleaf.
- Simmer for 10 minutes then add broth, salt and pepper to taste
- Simmer further for 10-15 minutes
- Serve with the parmesan sprinkled on top and a crusty French Baguette.
