Friday Food Feature ~



Ingredients / recipe
8 ripe fresh tomatoes
2 cloves of garlic
2 onions
Grated Parmesan Cheese
fresh thyme
celery stick
bayleaf
bit of olive oil
Vegetable broth
  • Peel and remove seeds from tomatoes.
  • Chop the onion and celery and saute in olive oil.
  • When celery and onion are soft and golden, add finely chopped garlic, tomatoes, thyme and bayleaf.
  • Simmer for 10 minutes then add broth, salt and pepper to taste
  • Simmer further for 10-15 minutes
  • Serve with the parmesan sprinkled on top and a crusty French Baguette.
