Cucumber Salad ~ Salade de Concombres 

One of my favorite salads is made with fresh garden cucumbers. Sliced cucumbers are mixed with Crème Fraîche Dressing (recipe below) in this simple salad. You'll need to start making the Crème fraîche for the dressing at least two days ahead, since it's made with whipping cream which you let "ripen" to a tangy flavor by culturing it with buttermilk. Your other choice would be to pick some up at your local grocery store.

2 medium-size cucumbers, peeled, seeded and thinly sliced
1 cup of Crème fraîche dressing (recipe follows)

Sprinkle cucumbers with salt and let stand in a colander to drain for about an hour. Rinse and drain. Combine dressing with cucumbers; season with salt to taste. If made ahead, cover and refrigerate until next day. Mix before serving. Makes 4-6 servings.

Crème Fraîche Dressing
Mix together:
1 cup Crème fraîche
3 tablespoons cider vinegar or lemon juice or wine vinegar (just choose one)
4 tablespoons minced shallot or chives
makes 1 cup
